The Philosophy and Landscape of La Maliosa
Agriculture can be practiced in harmony with the landscape, the land, and its delicate natural balance – without disrupting it, but rather enhancing it. We are Fattoria La Maliosa, and this is our founding principle.
The name of the winery comes from the Italian verb “ammaliare”, meaning “to bewitch” or “to enchant”, chosen to reflect the extraordinary beauty of the surrounding landscapes.
Fattoria La Maliosa is built on three core values: quality, beauty, and environmental health, with full respect for the land and its uniqueness. La Maliosa is nestled in the hills of the Tuscan Maremma, enriched by their natural elegance and divided between two territories. The Saturnia area features vineyards coexisting in balance with olive groves, arable land, and forests across 170 hectares of predominantly clay and chaotic stone soils. The Pitigliano area includes 3 hectares of vineyards planted on volcanic soils.
A Vision of Sustainable Craftsmanship
Founded by Antonella Manuli, Fattoria La Maliosa is rooted in a simple idea of quality: to craft wines and extra virgin olive oil using artisanal methods in complete harmony with nature. Certified organic since 2010, the estate also obtained SQNPI certification for sustainable quality in 2022. For Antonella, La Maliosa is a place-driven project centered on products – wine and olive oil – that truly represent its identity. It embodies the belief that a different, more respectful form of agriculture is not only possible, but essential.
The Metodo Corino – A New Path to Sustainable Excellence
In 2013, thanks to her encounter with agronomist and researcher Lorenzo Corino, Antonella Manuli developed and consolidated a series of highly innovative agronomic techniques aimed at ever-greater sustainability in wine and olive oil production. These practices have now been codified under the name “Metodo Corino” (registered patent and trademark), consisting of a set of innovative processes for grapes and wine production.
The method was created to prioritize what Antonella considers most important: the health of the environment, the vitality of the soils, and the well-being of both producers and consumers.
Sustainability at the Heart of La Maliosa
The location of Fattoria La Maliosa is primarily woodland, with limited human activity, both residential and agricultural, for dozens of kilometres – a deliberate choice. Sustainability has been a guiding principle for La Maliosa from the very beginning. We limit mechanical work, use organic soil cover techniques such as mulching, and develop pest management strategies that are in harmony with the environment. We carefully care for natural resources, adopting methods that preserve organic material in the soil, improve the farm, and support water conservation. Since 2013, La Maliosa has collaborated with the Florence CRA-ABP (Consiglio per la Ricerca e la Sperimentazione in Agricoltura – Centro di Ricerca per l’Agrobiologia e la Pedologia), an organisation dedicated to agrobiology and soil science research. Additionally, in 2010 the company obtained BioUe certification, underlining its commitment to organic and sustainable practices.
The Wines and Olive Oils of La Maliosa
Fattoria La Maliosa produces natural wines and extra virgin olive oils. The vineyards are part of a larger ecosystem in which different crops and the surrounding forest coexist in harmony. Grapes are cultivated through holistic and sustainable vineyard management, with the utmost respect for the history of the area. The minimally invasive cultivation methods ensure a balanced relationship between plants, animals, and people.
La Maliosa has revived vineyards that were historically cultivated in Maremma, favoring genetic diversity among different selections. An initial 60-year-old vineyard was recovered from semi-abandonment, while all subsequent vineyards planted between 2009 and 2023 replicate the diversity of the original vineyard, called Vigna Madre. White varieties include Procanico and Ansonica, while red varieties include Ciliegiolo, Sangiovese, and grey Cannonau.
In the olive groves, Fattoria La Maliosa is equally committed to preserving the original varieties historically found in the area. The historic olive trees consist of around 180 plants over 100 years old, representing typical Tuscan cultivars: Leccino, Frantoio, Moraiolo, Pendolino, and Leccio del Corno. The newer olive groves, spanning approximately 15 hectares with 3,800 plants, follow the historical cultivars and proportions, with most entering production with the 2015 harvest.

Saturnalia Wine Bar & Village Rooms
In the heart of Saturnia, in Piazza Vittorio Veneto, Fattoria La Maliosa has opened the Saturnalia Wine Bar & Village Rooms. The Wine Bar offers farm-to-table cuisine featuring the finest local products and serves all of Fattoria La Maliosa’s natural wines.
The Village Rooms provide five accommodations that combine country-chic charm with contemporary design touches, all housed within a fully renovated 17th-century building. This unique space allows guests to fully experience the essence of La Maliosa, blending authentic Tuscan hospitality with the beauty of the surrounding landscape.
